Liminal is a cuvée that serves to highlight some of the best fruit from each harvest, with a focus on harmonious expression of aroma, texture, and length. After significant sweating, apples for Liminal are typically macerated between 24 and 48 hours prior to pressing. Primary fermentations occur by native yeast in stainless steel and the cider is aged in old, Hungarian oak puncheons, to give it space to stretch its legs and gather breadth. Bottled by traditional method without disgorgement; no fining or filtration. Sulfured only once (if at all) at racking, based on pH.
