This Sotol is made from Dasylirion wheeleri, a wild brush plant native to northern Mexico. It is not an agave. Similar to mescal, it is easier drinking and has an herbal, earthy character. There is a fresh cut grass and distinctive sage flavor with a forest floor spin to it. Mix with lemon, lime, cucumber or light tonic.
