Crisp white wine grown in volcanic soils featuring a minerally expression. Côtes d’Auvergne, a new AOC is an area  set apart in from the Loire.  With a minimalist approach in the cellar, this 100% Chardonnay shows its crispiness and charm. Stainless steel fermentation with indigenous yeasts; no malolactic fermentation yet rests on lees for 3-6 months.  Made by Saint-Verny cooperative with an organic focus.
