A winery so environmentally conscious that it’s literally carbon negative (the cellar is constructed of hemp bricks). Their red blend changes every year but this one is 80% Merlot, 20% Cabernet Sauvignon, all concrete and no aging. Just fresh with red fruit notes. Medium to full-bodied richness, beautiful purity and light tannin. Decant before drinking with a sandwich or a bowl of pasta.
Located on the hillside above the village of La Liviniere, the first Cru Classe of the Minervois in the Languedoc region, Chateau Maris is now a 79-acre estate divided into a multitude of small vineyards. Chateau Maris has been certified by Ecocert since 2002, Biodyvin since 2004 and Demeter since 2008. Aged for 16 months in regular concrete tanks and egg shaped concrete tanks, this is rich and supple with ripe dark fruit aromatics accented by pepper and spice. Perfect for grilled meats and roasts.
